Garam flour (yellow split pea and chick pea) can make a delicious vegan omelette!
I could not believe how good the texture and taste was and how simple it was to make. It's a great alternative for people with wheat or gluten intolerance and the benefits are that they’re high in fibre, protein, complex carbohydrates, and contain many minerals and vitamins such as iron, magnesium, zinc, potassium, folate and other B vitamins.
The bonus is; it's totally inexpensive!
Vegan Omelette Recipe
3/4 cup gram flour 1/4 teaspoon himalayan pink salt 1/4 teaspoon cayenne pepper 1/4 teaspoon coriander powder 1/4 teaspoon onion Powder 1/2 teaspoon baking powder 1/4 teaspoon turmeric Handful of chopped red onions 1/2 teaspoon of dry or 1 teaspoon of fresh herbs of choice Handful of finely chopped veg of your choice 1/3 cup of water or coconut milk ( or any preference milk alternative)
Add all ingredients together and whisk into the flour, milk/water to a smooth consistency. Add to a lightly oiled pan and cook until clear juices run dry.
I prefer to give my onions a light fry on medium heat in coconut oil with salt and cayenne pepper and stir in 'dry' herbs before topping my omelette whist it is cooking in the pan, to give added flavour. (If I use fresh herbs, I top my omlette with them at the end).
