I just followed a traditional Romanian recipe my dear friend Mariana Gordan prepared for me last week called Vinete Picante... and I'd like to share with you!
Although this recipe is not fully alkaline, the garlic can be replaced with dry oregano, or a little pinch of onion powder and ginger powder. The small conventional tomatoes can be replaced with baby tomatoes, (equivalent amount to 2 two small tomatoes).

Here is the recipe...
Slice and lightly salt the aubergines, then keep under cover in the fridge over night. Drain the water produced by the aubergine, then throw this away, then grill aubergine lightly and put aside.
In a large pan, gently heat 1 tablespoon olive oil with a generous enough helping of chopped garlic and crushed chilli, then add two freshly chopped tomatoes and simmer slowly.
Quantity for seasonings should be 1/2 teaspoon.
1 medium Aubergine
1 small red onion
2 small tomatoes
Generous helping of garlic
Chilli according to taste
Add the aubergines to soak up the sauce, even adding a little water if necessary.
