How to Make Delicious Kale Fritters

Follow this quick and easy recipe to produce these delicious Kale Fritters - the perfect snack!

Serves 2-3 people

100g kale, washed, finely chopped

1 tablespoon fresh coriander, finely chopped

1/4 teaspoon of ground ginger (optional)

1/4 teaspoon of onion powder (optional)

150g red onions, finely chopped

1/2 teaspoon pink Himalayan salt

Cayenne pepper, to taste

1 teaspoon curry powder

1/4 teaspoon cumin seeds

150g chickpea flour

Grapeseed oil, for shallow frying

In a bowl mix together the onions, curry powder, cumin, cayenne pepper, salt, and fresh coriander.

Add the chick pea flour and water a little at a time and mix until a dough mixture forms. Not be too sticky, as you want to make a patty shape that holds together well.

Heat the grapeseed oil on a medium flame in a shallow pan. Make a patty shape with the mixture and dry until golden brown.

After a few minutes, turn the patty over and continue to cook for a few more minutes.

Remove using a spatula and drain on absorbent paper.

Taste the fritters and adjust the seasoning if required.

Make small pattys with the remainder of the mixture and shallow fry in batches until the fritters are cooked through.

That's it!
