Delicious, healthy and completely dairy free! Courgette and Kale Soup
• 2 Red onions finely chopped • 1 teaspoon of oregano • 2-3 tablespoons of coconut oil • 1 teaspoon cumin • 1 teaspoon coriander • 6 medium courgettes, chopped roughly • 300g kale • 2 tablespoons basil leaves • Himalayan pink Salt and cayenne pepper, to taste
1. Heat oil on a medium heat and add ½ teaspoon of Himalayan pink salt and ½ teaspoon of cayenne pepper.
2. Add onions, oregano, cumin and coriander, stirring until onions are browned, then Courgettes, and kale. Bring to a simmer for 15 minutes, until the courgettes are completely soft. Add basil and season. 3. Remove the saucepan from the heat and, using a hand blender, blend the mixture until smooth.
