Tuscan kale, also known as Cavolo Nero, packing more calcium than milk and more iron than red meat, this tasty leaf can be eaten raw, steamed, stir fried or just added to a dish.
Pak Choi, is a great source of vitamins B2, B6, C, A, K, beta carotene, folic acid, iron,calcium, manganese, magnesium, thiamin, niacin, phosphorus, potassium, selenium and zinc...Wow! Who knew this innocent looking veggie had so much nutritional benefit. It can be eaten raw as a crunchy salad, steamed or stir fried.
Courgettes are high in vitamin K and vitamin C. Courgettes, better known in the United States as zucchini, contain vitamin K, vitamin C, potassium and dietary fibre. This underrated veggie is so versatile it can be popular with kids, spiralised and eaten raw as a spaghetti, the perfect dish to use up the humble courgette, it can be topped on pizzas, used as a soup and even used as an ingredient to moisten muffins! Their super fresh leafy salad mix, is a very, very healthy, and a hearty salad, It offers a quartet of greens and with a fabulous grapeseed oil and apple cider vinegar dressing this goes down a treat!
