Who doesn't love a guilt-free vegan cheesecake?

I guarantee you will be licking your lips with pleasure when you taste the soft and crunchy combination of coconut and biscuit. 

If you remember, a few days ago a friend gave me a piece of bhudda's hand (an exotic fruit) and I've added some to this recipe to give it lemony and zesty flavour.

Here's a simple recipe for a healthy and flavoursome Ginger Beer refreshment:

Makes 1 litre

Large knob of ginger (or to taste)
6 Desert spoons of agave syrup
1 Litre spring water

Method


Blend ginger with water. Strain the pulp.

Add agave syrup and mix together.

Chill in the fridge for fresh, refreshing ginger beer!

200g Baby plum tomato

1 Teaspoon chopped red onion

50g Red sweet pepper

1g Sun dried tomato (soaked and chopped)

1 Tablespoon fresh basil leaves (dried basil  optional)

Pinch of seal salt

1 Tablespoon agave syrup
